Prep & Cook Time
- Prep Time: 10 minutes
- Cook Time: 25 minutes
- Total Time: 35 minutes
What You’ll Need
- 2 tbsp butter or olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 (28 oz) can whole peeled tomatoes
- 2 cups vegetable broth (or chicken broth)
- 1/2 cup heavy cream (or coconut milk for a dairy-free option)
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp black pepper
- 1 tsp dried oregano
- 1/2 tsp sugar (optional, to balance acidity)
- 1/4 cup fresh basil leaves, chopped
How to Make It
Step 1: Sauté the Aromatics
In a large pot over medium heat, melt the butter (or heat olive oil). Add the onion and cook for 3-4 minutes until softened. Stir in the garlic and cook for 30 seconds, just until fragrant.
Step 2: Simmer the Soup
Pour in the whole peeled tomatoes (including juices) and use a spoon to break them up slightly. Add the broth, oregano, salt, black pepper, and sugar (if using). Stir and bring to a gentle simmer. Cook uncovered for 20 minutes, stirring occasionally.
Step 3: Blend Until Smooth
Remove the pot from heat. Use an immersion blender to blend the soup until smooth. If using a regular blender, let the soup cool slightly before transferring in batches.
Step 4: Add Cream & Basil
Return the blended soup to the pot over low heat. Stir in the heavy cream and fresh basil, allowing it to warm through for 2 minutes before serving.
Tips for Success
- Want a richer texture? Add more cream for extra creaminess.
- Make it dairy-free: Use coconut milk instead of heavy cream.
- For extra depth: Add a splash of balsamic vinegar before serving.
How to Store & Reheat
- Fridge: Store in an airtight container for up to 4 days.
- Reheat: Warm on the stove over low heat, stirring occasionally, or microwave in 30-second bursts.
Make It Your Own
For a heartier meal, serve with grilled cheese, croutons, or roasted chickpeas for added texture.
