Easy 30-Minute Chicken Fajitas for Busy Nights
This delicious chicken dinner comes together in 30 minutes with hardly any cleanup.
It became a weeknight staple after I realized I could prep everything in five minutes and still have time to relax while it bakes. Plus, the whole meal happens on one pan, so cleanup is basically nonexistent!
Slice the veggies ahead of time and store them in an airtight container in the fridge for up to 3 days. You’ll save time when it matters most.
Kid-Friendly Idea:
For little ones, serve the chicken, peppers, and tortillas separately so they can build their own fajitas, or just eat what they like most.
Ingredients
- 1 lb chicken breast, thinly sliced
- 3 bell peppers (assorted colors), sliced
- 1 medium onion, sliced
- 2 tbsp olive oil
- 1 packet fajita seasoning
- 8 flour tortillas
- Optional toppings: sour cream, guacamole, shredded cheese

Swap the chicken for shrimp, steak, or tofu for variety.
Add sliced zucchini or mushrooms for more veggies.
Love spice? Toss in a teaspoon of cayenne or chili powder.
Instructions
- Preheat oven to 400°F.
