What You’ll Need

For the Chicken & Vegetables:

  • 2 boneless, skinless chicken breasts (or thighs)
  • 1 zucchini, sliced
  • 1 bell pepper, sliced
  • 1 red onion, cut into wedges
  • 1 cup cherry tomatoes
  • 1 cup baby potatoes, halved

For the Marinade:

  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper

How to Make It

Step 1: Preheat & Prep
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil for easy cleanup.

Step 2: Marinate the Chicken
In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper. Place the chicken in a large bowl or zip-top bag and pour half the marinade over it. Let it sit while you prep the vegetables (or marinate for 15-30 minutes for deeper flavor).
