Prep & Cook Time
- Prep Time: 10 minutes
- Marinating Time (Optional): 15-30 minutes
- Cook Time: 25-30 minutes
- Total Time: 35-40 minutes (without marinating) or up to 1 hour (if marinating)
What You’ll Need
For the Chicken & Vegetables:
- 2 boneless, skinless chicken breasts (or thighs)
- 1 zucchini, sliced
- 1 bell pepper, sliced
- 1 red onion, cut into wedges
- 1 cup cherry tomatoes
- 1 cup baby potatoes, halved
For the Marinade:
- 3 tbsp olive oil
- Juice of 1 lemon
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
How to Make It
Step 1: Preheat & Prep
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil for easy cleanup.
Step 2: Marinate the Chicken
In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper. Place the chicken in a large bowl or zip-top bag and pour half the marinade over it. Let it sit while you prep the vegetables (or marinate for 15-30 minutes for deeper flavor).
Step 3: Prepare the Vegetables
Toss the zucchini, bell pepper, onion, cherry tomatoes, and baby potatoes with the remaining marinade. Spread everything evenly on the prepared sheet pan.
Step 4: Bake to Perfection
Nestle the marinated chicken among the veggies and bake for 25-30 minutes until the chicken is fully cooked (internal temp should reach 165°F). If you want a golden-brown finish, broil for an additional 2-3 minutes at the end.
Tips for Success
- Swap out the veggies for whatever you have on hand—broccoli, carrots, or green beans work great.
- If using chicken thighs, adjust the baking time to 30-35 minutes.
- Meal prep tip: Marinate the chicken in advance for extra flavor!
How to Store & Reheat
- Fridge: Store leftovers in an airtight container for up to 4 days.
- Reheat: Warm in a 350°F oven for 10 minutes or microwave in 30-second bursts until heated through.
